The Fresco Mexican Story

Fresco Mexican is collaboration between Marco Rojas and Carlos Cervantes. Both started their careers at a young age.

Marco Rojas comes from Guadalajara Mexico where he developed his regional style of Mexican cooking in his mother’s kitchen. It was there that he learned how to use the fresh produce, cheese, and meats from the local Mercado.

 

Marco relocated to New Jersey in the late eighties and expanded his skills of international cuisine working as Executive Chef at The Black Horse Pub in Mendham and The Short Hills Club in Short Hills.

 

When we started our own restaurant, I knew it had to be special -        “I named our restaurant Fresco (fresh), because there really is no other way”

Carlos Cervantes is a fourth generation Key West Conch with strong Cuban roots. Carlos started his career in hotels at the famed Pier House Beach Club and Resort.

 

After moving to New Jersey in 1988, Carlos managed various restaurants throughout the northern New Jersey area. In 1996 Carlos began a 15 year stint at The Madison Hotel in Morristown as their Sales and Catering Manager.

 

“It was the best of times. I was privileged to work along side some of the best in the wedding industry, creating beautiful events and making lasting memories for many couples.”

In 2006, we opened our first Fresco restaurant in Flanders NJ. In 2010, we moved Fresco Mexican to Chester NJ. Fresco Mexican is an extension of our tight family backgrounds, where food was always the center of our households. It was a time to nourish each other, reconnect, and create lasting bonds.
